White chocolate hearts

Hello everybody!

Long time no see … I know, life just gets so busy, having a toddler takes up all my time and I wouldn’t want it any other way! But I still try to blog or create recipes any time I have the occasion.

Valentine’s Day is just around the corner, so here is a very flattering but also super easy to make recipe to surprise your loved one.

Ingredients:

1. 1 cup cacao butter

2. 1 cup coconut butter

3. 3 tbsp of maple syrup or low carb sweetener

4. Freeze dried strawberries

Directions:

1. Add cacao butter and coconut butter to a cup over a sauce pan of boiling water.

Stir the two ingredients until all is melted but do not allow water to splash into cup.

2. Stir in the rest of the ingredients, taste-test for sweetness, and pour mixture into molds.

3. Freeze for 1 hour or more until solid.

4. Decorate it with freeze dried strawberries

5. Store in refrigerator or freezer

Raw vegan carrot cake

Hello everybody!

This carrot cake is so easy to make, you will be surprised.

Ingredients:

For the base

  • 3 large carrots grated
  • 1 cup raw walnuts
  • 1 cup of soft dates
  • 2/3 cut shredded coconut
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • Pinch of salt

For the cream layer

  • 2 cups raw cashews (soaked overnight)
  • 1/4 cup maple syrup (or agave or liquid sweetener)
  • 2 tbsp lemon juice
  • 3 tbsp water
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut oil melted

Directions:

  1. Blend all base ingredients in the blender till well combined
  2. Press half of the batter in a round medium springform
  3. Blend the cream ingredients until smooth
  4. Pour half of it on the base and freeze for 20-30 minutes
  5. Press the rest of the base over the cream layer and top it with the rest of the cream
  6. Freeze it again for 20-30 min
  7. Spread the cream all over your cake and freeze a little more
  8. After it’s ready to serve
  9. Enjoy!

Raw vegan lime cheesecake

Hello everybody!

I have a great recipe today for those who love a fresh and easy dessert. The limes give this cake a tangy fresh note, but it’s also a very creamy and rich.

Ingredients for the crust:

  • 1 cup almond flour
  • 1cup pecans
  • 1/4 cup sweetener
  • 5 tbs of coconut oil melted

Ingredients for the filling:

  • 2 cups raw cashews (soaked overnight)
  • 1/2 cup fresh lime juice
  • Zest of 1 lime
  • 1/3 cup sweetener
  • 1/2 avocado (for the color and creaminess)
  • 4 tbs coconut oil

Directions:

  1. Process all crust ingredients in a food processor. Transfer into a springform pan and press it down firmly. Set it in the freezer
  2. Blend all ingredients into a creamy consistency
  3. Pour the mixture on the crust
  4. Freeze it for 2 hrs
  5. Enjoy!!

Healthy raw brownie balls

Hello everybody, happy weekend!

I have a heavenly dessert for you, it’s sweet, dense and very easy to make.

Ingredients:

  1. 2 cups raw almonds
  2. 20 menfolk dates (pitted)
  3. 1/4 cup cocoa powder
  4. 1/4 cup natural peanut butter
  5. Pinch of salt

Directions:

  • First process the raw almonds until till they become a fine almond meal
  • Add all the other ingredients into the food processor
  • Process it until everything is well blended
  • Roll the dough into small balls
  • When they are all done, roll some of them in coconut flakes, others in cocoa powder or roll them in melted chocolate
  • Store them in the refrigerator
  • Enjoy!

Energy balls in 5 minutes (low carb/vegan/Keto/paleo)

As I said before, these days I make more desserts than food, but these desserts can’t be compared to the desserts we are used to. They have no sugar no processed ingredients or flour, food coloring or anything you cannot pronounce.

These recipes are 100% made out of natural ingredients, usually not more than 5.

They fit perfectly in any kind of diet. These days people fallow all kinds of diets like the low carbohydrate diet, the ketogenic diet, also paleo diet is very popular, not to mention vegan and raw vegan.

So here are the ingredients:

  • 2 tbsp of sweetener (I used monk fruit extract)
  • 2 tbsp of water
  • 2 cups of almond flour
  • 1 tbsp almond extract
  • 1 tbsp of vanilla extract

For toppings:

  • coconut flakes
  • hemp hearts
  • cinnamon
  • cocoa powder

  1. Mix the 2 tbsp of sweetener with the 2 tbsp of water
  2. add the almond extract and the vanilla extract
  3. add the 2 cups of almond flour
  4. mix them well
  5. form little balls
  6. roll them in the toppings you prefer (coconut, cacao, chocolate, hemp hearts, chia seeds)

Place them in the fridge for 1 hr, but you can serve them immediately too.

Healthy chocolate mousse

As I wrote in my previous blog post, I’m in a dessert making mood, so the recipes of desserts continue 🙂

The day before I made the most simple dessert ever. It can be made in 5 minutes, just a few ingredients, no baking, no frying.

This dessert can be consumed by everybody who is on a vegan/Keto/paleo/gluten free/sugar free/ low carb diet!

Ingredients:

  • 1 avocdo
  • liquid stevia
  • 1 tbsp vanilia extract
  • 3 tbsp cocoa powder
  • 1 tbsp of full fat coconut milk

Directions:

  1. Mix all ingredients in a blender
  2. Pour the chocolate mousse in a glass
  3. decorate them with fruits, nuts
  4. Enjoy!

Cashew parfait (vegan/low carb/paleo/Keto)

I am in a dessert making mood, that’s why I post dessert recipes one after the other 🙂

Today I made this heavenly parfait from 3 ingredients. It’s is super healthy, nutritious and very filling!

Pay attention to your portion sizes! One glass on this dessert is one portion! Eve if it’s a healthy dessert, if you over do it, it can be too much!

Here is the recipe:

Ingredients:

  • 2cups of cashew nuts
  • stevia
  • 1/2 cup of strawberries
  • 1 lime juice
  • roasted nuts

Directions:

  1. Soak the cashews for 2 hrs minimum
  2. Blend the cashews in a high power mixer with the stevia and lime juice and a little bit of almond milk if needed
  3. Caramelise your preferred nuts with stevia and cinnamon
  4. When your cashew nuts became as a nice paste separate it in two
  5. mix the strawberries with one part of the cashew cream
  6. Layer your glass wit nuts, lime cashew cream, nuts, strawberry cashew cream
  7. You are done!

Chia pudding (best breakfast ever) low carb/ vegan/ paleo

  Hello everybody! 
You want a quick, healthy, nutritious and delicious breakfast? Here you go! Ingredients:

  1. 1 cup unsweetened almond milk 
  2. Vanilla extract 
  3. Stevia
  4. 3 tbsp of chia seeds 
  5. 1 cup raspberries 
  6. Coconut flakes

Directions:

  1. Add the stevia and the vanilla extract to your almond milk
  2. Add the chia seeds to the almond milk
  3. Stir it slowly and let it sit for 5-10 min
  4. Meanwhile mash the raspberries 
  5. Add the mashed raspberries in a jar
  6. Pour the chia pudding in the jar
  7. Decorate it with coconut flakes, almonds and fruits
  8. Enjoy!!!

Coconut custard (low carb/ paleo/ gluten free)

  Hello everyone! 

I’m back with a new dessert recipe. I made it yesterday and everybody was impressed by it. 

It’s low carb, 4 net carbs in total. You can eat this even if you are on the most sever diet ever! 

Ingredients: 

  • 1 cup of coconut milk
  • 3 eggs
  • Stevia or your favorite sweetener 
  • 1 tbsp of vanilla extract 

Directions:

  1. Heat up the coconut milk but don’t let it boil 
  2. In a blender mix the eggs with the vanilla extract and sweetener 
  3. Slowly add the coconut milk
  4. After you mix it well pour the mixture in 2 small cups and place them in the oven for 35-45 minutes
  5. Or you can make it in the microwave too in 2-3 minutes 😊
  6. Enjoy!

Vegan chocolate truffles 


Hello my dears, I have a special Christmas recipe for you today. I made these  raw vegan healthy chocolate truffles with just a few natural and simple ingredients. For sure they will look amazing on your Christmas dinner table.

Here are the ingredients you’ll need:
1/2 shredded coconut

1/2 cup almond or cashew butter

2 tablespoons of cocoa

Stevia – depending on how sweet you like it

1/4 cup melted coconut oil

1/2 cups of walnuts

Ingredients for the chocolate coating:
1/4 cup Melted coconut oil

1/4 cup melted cocoa butter

1 tablespoon of cocoa

Stevia

Directions
Mix all your ingredients in a blender, taste it if it’s sweet enough. You will get a sticky bater, if it’s to dense you add almond or coconut milk.

Form some balls and put them into the fridge to chill. Meanwhile you prepare the chocolate coating.

Heat up a little bit the cocoa butter and the coconut oil, add the cocoa and the stevia and it’s ready. Take out the balls from the fridge and cover them with chocolate and some crushed walnuts.

Chill them in the fridge for 1-2 hours.
