Low carb fluffy pancakes 

Hello everybody! 

Yesterday I asked on my instagram of you guys would like the recipe for these pancakes, and everybody answered with YES, so here it is.

INGREDIENTS:

  • 2 large eggs
  • 2 oz cream cheese
  • 2/3 cup almond flour
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • 2 tablespoons of Swerve sweetener (or any other sweetener)
  • 1-2 tablespoons of water

DIRECTIONS:

  1. Add all ingredients to blender. 
  2. Blend until smooth
  3. Let batter sit for 2-5 minutes.
  4. Heat a non-stick pan to medium heat
  5. Cook until pancake is golden browne on each side. 

Serve pancakes topped with fruits or butter and syrup!

Energy balls in 5 minutes (low carb/vegan/Keto/paleo)

As I said before, these days I make more desserts than food, but these desserts can’t be compared to the desserts we are used to. They have no sugar no processed ingredients or flour, food coloring or anything you cannot pronounce.

These recipes are 100% made out of natural ingredients, usually not more than 5.

They fit perfectly in any kind of diet. These days people fallow all kinds of diets like the low carbohydrate diet, the ketogenic diet, also paleo diet is very popular, not to mention vegan and raw vegan.

So here are the ingredients:

  • 2 tbsp of sweetener (I used monk fruit extract)
  • 2 tbsp of water
  • 2 cups of almond flour
  • 1 tbsp almond extract
  • 1 tbsp of vanilla extract

For toppings:

  • coconut flakes
  • hemp hearts
  • cinnamon
  • cocoa powder

  1. Mix the 2 tbsp of sweetener with the 2 tbsp of water
  2. add the almond extract and the vanilla extract
  3. add the 2 cups of almond flour
  4. mix them well
  5. form little balls
  6. roll them in the toppings you prefer (coconut, cacao, chocolate, hemp hearts, chia seeds)

Place them in the fridge for 1 hr, but you can serve them immediately too.

Chia pudding for breakfast 

Hello my dears! Here is a fast healthy and delicious recipe for all of you who promised last night while watching the super bowl, that you start to eat healthy 😉

  
Ingredients:

  • Almond milk
  • 1/2 cup of organic chia seeds
  • Stevia
  • Vanilla extract 

Directions:

  1. Mix the vanilla extract and the stevia than slowly add the chia seeds and stir it slowly.
  2. Let it sit I. The fridge for 10-15 minutes 
  3. Decorate it with your favorite fruits and nuts

Low carb healthy pancakes

Here is a quick breakfast recipe, that is healthy, fast and delicious, and did i mention low carb?! 🙂

Even if you are in a super us in the morning these pancakes can be made in about 10 minutes.

Here are the ingredients:

  • 3 eggs
  • 1 cup of coconut flour
  • 1/4 cup coconut milk
  • 1 tbs of vanilla extract
  • few drops of stevia

  1. Mix all ingredients in a blender
  2. Fry them in a little bit of coconut oil, use non sticking frying pan
  3. Decorate them with some blueberries and pecan nuts
  4. Enjoy!

Vegan chocolate truffles 


Hello my dears, I have a special Christmas recipe for you today. I made these  raw vegan healthy chocolate truffles with just a few natural and simple ingredients. For sure they will look amazing on your Christmas dinner table.

Here are the ingredients you’ll need:
1/2 shredded coconut

1/2 cup almond or cashew butter

2 tablespoons of cocoa

Stevia – depending on how sweet you like it

1/4 cup melted coconut oil

1/2 cups of walnuts

Ingredients for the chocolate coating:
1/4 cup Melted coconut oil

1/4 cup melted cocoa butter

1 tablespoon of cocoa

Stevia

Directions
Mix all your ingredients in a blender, taste it if it’s sweet enough. You will get a sticky bater, if it’s to dense you add almond or coconut milk.

Form some balls and put them into the fridge to chill. Meanwhile you prepare the chocolate coating.

Heat up a little bit the cocoa butter and the coconut oil, add the cocoa and the stevia and it’s ready. Take out the balls from the fridge and cover them with chocolate and some crushed walnuts.

Chill them in the fridge for 1-2 hours.
