Blueberry lemon cheesecake (sugar free, vegan, raw, low carb)

When I crave sweets, I make them myself!

Yesterday while my 2 month old baby was napping, I thought I should make something delicious, fresh and fast, cause baby can wake up any minute….so I created this magic

Ingredients for the crust:

  • 1 cup almond flour
  • 1/2 cup melted coconut oil
  • 1/4 cup monk fruit extract sweetener or any other sweetener of your choice

Ingredients for the blueberry layer:

  • 1 cup blueberries
  • 1/2 cup soaked cashews
  • 1/2 cup coconut oil
  • 3 tbs monk fruit sweetener

Ingredients for the lemon layer:

  • 1/2 cup lemon juice
  • zest of 1 lemon
  • 1/2 cup soaked cashews
  • 1/2 cup coconut oil
  • 1/4 cup sweetener

Directions:

  1. First we prepare the crust by mixing all the ingredients
  2. press the mixture in a cake dish and put it in the freezer
  3. meanwhile we prepare the blueberry layer
  4. In a blender mix all ingredients and pour it on the top of the crust
  5. Put it back in the freezer while we prepare the lemon layer
  6. Same thing, blend all ingredients and pour it on the top of the blueberry layer
  7. Let it chill for 2 hrs
  8. Decorate it with some frozen blueberries and Enjoy!!!

Chocolate-coconut fat bombs

I have a new diet recipe again for you! Probably you read about the benefits of coconut oil, if not you should! Besides all the benefits cooking with it, it’s amazing!

Theese fat bombs main ingredient is coconut oil, you would have not guessed it right? They contain zero carbohydrates, so being on a low carb or ketogenic diet, this is best you can ever have.

Ingredients for the chocolate layer:

  • 4 tbsp of coconut oil
  • 2 scoops of powdered stevia (or any kind of sweetener)
  • 1-2 tbsp of cocoa powder
  • vanilla extract

Ingredients for the coconut layer

  • 3 tbsp of coconut oil
  • 3 tbsp of coconut butter (or coconut manna)
  • 2 scoops of powder stevia
  • few drops of lemon or lime juice

  1. Melt the coconut oil, add all ingredients for the chocolate layer
  2. Pour the mixture into cupcake molds
  3. place them in the freezer
  4. meanwhile we prepare the coconut layer
  5. in the melted coconut oil add the coconut butter, sweetener and lime juice
  6. mix it well, till the coconut butter becomes creamy
  7. when the chocolate layer is already solid, pour the coconut layer on it and put it back in the freezer for 15-20 minutes
  8. Enjoy!

 

Energy balls in 5 minutes (low carb/vegan/Keto/paleo)

As I said before, these days I make more desserts than food, but these desserts can’t be compared to the desserts we are used to. They have no sugar no processed ingredients or flour, food coloring or anything you cannot pronounce.

These recipes are 100% made out of natural ingredients, usually not more than 5.

They fit perfectly in any kind of diet. These days people fallow all kinds of diets like the low carbohydrate diet, the ketogenic diet, also paleo diet is very popular, not to mention vegan and raw vegan.

So here are the ingredients:

  • 2 tbsp of sweetener (I used monk fruit extract)
  • 2 tbsp of water
  • 2 cups of almond flour
  • 1 tbsp almond extract
  • 1 tbsp of vanilla extract

For toppings:

  • coconut flakes
  • hemp hearts
  • cinnamon
  • cocoa powder

  1. Mix the 2 tbsp of sweetener with the 2 tbsp of water
  2. add the almond extract and the vanilla extract
  3. add the 2 cups of almond flour
  4. mix them well
  5. form little balls
  6. roll them in the toppings you prefer (coconut, cacao, chocolate, hemp hearts, chia seeds)

Place them in the fridge for 1 hr, but you can serve them immediately too.

Healthy chocolate mousse

As I wrote in my previous blog post, I’m in a dessert making mood, so the recipes of desserts continue 🙂

The day before I made the most simple dessert ever. It can be made in 5 minutes, just a few ingredients, no baking, no frying.

This dessert can be consumed by everybody who is on a vegan/Keto/paleo/gluten free/sugar free/ low carb diet!

Ingredients:

  • 1 avocdo
  • liquid stevia
  • 1 tbsp vanilia extract
  • 3 tbsp cocoa powder
  • 1 tbsp of full fat coconut milk

Directions:

  1. Mix all ingredients in a blender
  2. Pour the chocolate mousse in a glass
  3. decorate them with fruits, nuts
  4. Enjoy!

Vegan chocolate truffles 


Hello my dears, I have a special Christmas recipe for you today. I made these  raw vegan healthy chocolate truffles with just a few natural and simple ingredients. For sure they will look amazing on your Christmas dinner table.

Here are the ingredients you’ll need:
1/2 shredded coconut

1/2 cup almond or cashew butter

2 tablespoons of cocoa

Stevia – depending on how sweet you like it

1/4 cup melted coconut oil

1/2 cups of walnuts

Ingredients for the chocolate coating:
1/4 cup Melted coconut oil

1/4 cup melted cocoa butter

1 tablespoon of cocoa

Stevia

Directions
Mix all your ingredients in a blender, taste it if it’s sweet enough. You will get a sticky bater, if it’s to dense you add almond or coconut milk.

Form some balls and put them into the fridge to chill. Meanwhile you prepare the chocolate coating.

Heat up a little bit the cocoa butter and the coconut oil, add the cocoa and the stevia and it’s ready. Take out the balls from the fridge and cover them with chocolate and some crushed walnuts.

Chill them in the fridge for 1-2 hours.

Raw raspberry cheesecake recipe

I just made the most extraordinary dessert in my life. When I say dessert you should know I’m not talking about donuts or cookies 😉. It’s the middle of summer so all we need is something refreshing, delicious and sweet. Well this recipe combines all these characteristics in one. You can make it in less than 30 minutes, and it’s more simple as you imagine.

Here is the recipe.

For the base you will need:

1 cup almonds or walnuts

12 dates

1/4 cup shredded coconut

For the filling you will need:

2 cups of cashews soaked in water over night or at least for 6 hours

1/4 cup raw honey

1/4 cup coconut oil

2 table spoon of cocoa butter

1 cup raspberries (fresh or frozen)

Directions

Blend all base ingredients in a food processor until it sticks together. Press into base of a lined baking tin.

Blend all fillings ingredients (except raspberries) Ina high speed blender until smooth. Pour half onto base and put it in the freezer. Add raspberries to blender and blend until completely combined. Gently pour over top of filling. Put in freezer over night to set and you are done. You can decorate it with fresh raspberries, nuts, shredded coconut or with whatever you like.

It’s healthy, raw, delicious, with no added sugar or flour.

Where to eat healthy when on vacation in Barcelona

As you can tell from the title of this article, I was for a little while in Barcelona (Spain). I have to tell you this city doesn’t just have gorgeous beaches, wonderful views and buildings, but the food there is absolutely amazing. In this article I will tell you about the best places to eat healthy and delicious food. Believe me we tried them all!

If you are planning a trip to Barcelona, you should be aware that time passes so fast, because of all the things you can do and visit, or just chill at a beach bar drinking some freshly made pina colada from fresh coconut milk and pineapple.

So let’s see which restaurants you should definitely try out if you are around.

montjuic1. The first place you need to visit is El Xalet de Montjuïc.This place is pure luxury because of its ambiance and fantastic views. The restaurant has a large panoramic terrace and a beautiful dining room from where the view is just spectacular. The dishes are mostly Mediterranean and Catalan, respecting the traditional flavours and fresh produce. I ate here a delicious appetizer: Hummus with crunchy vegetables, sesame seeds and crunchy king-prawns skewer. 2. The second restaurant I recommend is Veg world India, a small Indian vegetarian restaurant. It’s not as luxurious as the first one, but the food is just amazing. If you are interested in eating healthy, tasty and spicy in a nice Indian ambiance, than you are in the perfect place. You must try the mango lassi drink, made of chilled full fat fresh curd/yoghurt, fresh chopped mango and a dash of ground cardamom. You also need to try the garlic or cheese nan and obviously some of their special indian dishes served with a delicious saffron rice. wpid-img_20150607_170942.jpg3. The third place I recommend for you to visit is the WET pool and terrace. It’s a gorgeous and luxury place inside of the W hotel on the beach. This place is perfect to talk, sunbath and to eat and drink something delicious. We tried out some super tasty smoothies like the strawberry & banana, the mango & passion fruit but also some cocktails like the pineapple & ginger mojito. The food here really amazed us, we liked it so much, that the next day we went back and ordered the same things. I highly recommend the hot quinoa balls with a special spicy eggplant cream. We also ate some focaccia bread with 3 different kind of dips: guacamole, sour cream & cheddar cheese. I really enjoyed this place, we tried out lots of great dishes and had a great night. From the starters menu I highly recommend the hummus and falafel with assorted vegetables, yoghurt, cucumber and lemon sauce. Served with pita bread. We also tried the strawberry gazpacho and the spinach ravioli with smoked vegetables sauce, pecorino cheese and tomato oil. And of course as I am on a vacation I like to try out new things, so I tried the delicious apple and cinnamon tatin, served with crumbled almonds and fresh cheese ice cream. Another great place to eat if you really want something healthy and fast, Teresa Carles’s place is the best choice. They have so amazing fresh cold pressed juices, great appetizers, soups, main dishes and raw desserts. Yes it is like paradise. Everything is freshly made, you can choose between raw, raw vegan, vegan, gluten free or vegetarian. The waiters are super-fast, they take the orders fast and bring the food in no time. We actually came back to this place twice. We tried out a lots of food, so I leave you the online menu to decide for yourself.
