Guacamole – avocado dip

Today I have for you a very nutritious healthy and delicious recipe for those who love avocados.

The Guacamole  is an avocado-based dip that originated from Mexico. You can also use it as a condiment or salad ingredient.

Here is what you need:

  • 2 ripe avocados
  • 1 lime juice
  • 1 teaspoon minced garlic
  • 3 tablespoons of chopped fresh cilantro
  • 1 pinch ground cayenne pepper
  • 1 pinch of salt

Directions: 

In a medium bowl, mash together the avocados, lime juice, and salt. Mix in the cilantro, garlic and cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.

You can serve it with chopped vegetables like celery carrots, cherry tomatoes, but u can use it as a dip for tortilla chips too 🙂

Healthy breakfast pancakes

How are you today? Here where I live it totally feels like spring, the sun is out, the weather is so warm and people seem more happy and joyful.

Today I have for you a super delicious and healthy breakfast recipe! I usually eat this for breakfast, but you can eat it as a dessert or after your workout. It is a healthy version of the American pancake, which means it does not have refined and processed ingredients like sugar, flour, milk, butter etc. Contains a good amount of protein from the eggs, some healthy fats and it’s very low in carbohydrate.

Here is what you will need:

  •  2 whole eggs plus one egg white
  • 3 tablespoon of coconut flour
  • ½ banana
  • ½ cup natural unsweetened almond milk
  • ¼ teaspoon of Cinnamon
  • ¼ teaspoon of natural vanilla extract

Mix all the ingredients in a mixer till it’s smooth. Heat your non sticky pan and cook them till they have a nice golden colour.

You can add any kind of HEALTHY topping as you like, some honey or natural maple syrup, natural peanut butter or shredded coconut. Today I decorated mine with a teaspoon of honey and some poppy seeds.

So this is how my kind of breakfast looks like today. It is delicious, healthy and it’s less than 300 calories/portion. For breakfast you can eat two peaces of this pancake, please pay attention to your portion size as always!

One bad meal won’t make you fat!!

Look at this picture, this was my lunch today! I know, it’s not a healthy meal, and it is not a good example for you to show. BUT, I want to tell you something, nobody is perfect, nobody can eat 100% just healthy and clean food. Our body and mind sometimes need those unhealthy greasy foods, so once in a while it’s not such a bad thing to eat a pizza or pasta or lasagna or a cheesecake or whatever you prefer. You know there is a saying “One bad meal won’t make you fat, just like one good meal won’t make you skinny” and this is so true. Of course if you ask me, I advise you to eat healthy 90% of the times, and indulge in a treat meal 10% of the times. The healthier you want to get, the faster you want results, the stricter you’ll have to be. On the other hand life is short, so you have to enjoy it. If you crave something just go for it, and the next day you will pay more attention on what you are eating! I hear people say all the time, that if they eat an unhealthy meal their diet is “gone” or they feel guilty for it. Don’t be! We are humans, and believe me those 1-2 bad meals won’t “destroy” your diet, you won’t get fat from that and especially don’t feel guilty for it. I really feel good after this huge pizza  🙂

Love pancakes

Look what I just made. Yes you guessed it, it’s pancake. I really love pancakes, but this one is adorable. I would eat almost everything that has a heart shape, well…..almost :))

It’s a very simple recipe, but I tell you it is delicious, healthy, low calorie, low fat, and it doesn’t contain flour or milk.

Here are the ingredients:

  • 2 eggs
  • 2 banana
  • 1 tbs of shredded coconut
  • 1ts of cinnamon

And that’s it. You can add some honey or any kind of natural sweetener if you like, but the bananas are sweet enough, so it’s your choice.  Just mix the ingredients in a blender and fry them on a low heat. I have a great non sticky pan that doesn’t need any oil for cooking, but you can add 1 tbs of coconut oil.

I told you it’s easy 🙂

Flourless low carb pumpkin muffins

Today I had some friends over, and I thought I will make them something sweet but low carb and healthy. Now that it’s pumpkin season I though why not to make some delicious muffins out of it J

So go ahead and please try this recipe, I tell you right now it’s phenomenal, it fits perfect with the weather. Fall is a nice season, it’s not too cold it’s not that hot, it’s cozy, it’s romantic. That’s why they named it fall because people fall in love …. I think 🙂

This is really an easy recipe, so it doesn’t require being a chef in the kitchen 🙂

Here are the ingredients:IMAG4489hh

  • 1/2 cups almond flour
  • 1/2 cups shredded coconut
  • 1 cup baked pumpkin or some organic pumpkin pure
  • 3 eggs (beaten)
  • ¼ cup raw honey
  • 2 TBS coconut oil, melted
  • Few peaces of walnuts
  • 1 TBS of cinnamon
  • ½ TBS salt

 

Directions

  1. Preheat oven to 350°F.
  2. In a large bowl, combine all ingredients and mix well.
  3. Using a spoon, fill each muffin liner close to the top.
  4. Add pumpkin seeds on top.
  5. Bake for 20-25 minutes and voilà!

These little muffins are DELICIOUS and the best part is they’re GUILT FREE!! I love these for dessert but you can eat it for breakfast or as a snack.

My favourite breakfast – healthy oatmeal

I just made the most good looking and tasty breakfast in weeks!

I started to eat this kind of breakfast almost every day. It tastes so good, you can make it every day with different flavours, fruits or nuts. If I eat this first thing in the morning, it keeps me full for 2-3 hours, which is a lot for me 🙂

So here are the ingredients:

  • 1/2 cup rolled oats
  • 1/2 cup coconut milk, but you can use any other type of milk
  • 1 banana
  • 1 spoon or more cocoa powder
  • 2 spoon of walnuts
  • 1/4 spoon vanilla extract (optional)
  • some goji berries and shredded coconut on top
Instructions:
Combine all ingredients in a blender on a slow speed and put in a glass. You can layer it with any kind of fruits like bananas or berries or put some cinnamon and dried fruits, but for me it was perfect like this!
You can prepare it in 5 minutes in the morning, or if you really don’t have 5 minutes in the morning, than prepare it in the evening and store it in the fridge 🙂

Healthy snack idea

I just made the most delicious healthy snack, and I want to share it with you immediately.

I did not invent this, I saw the recipe on one of my friends page.

Here is what you need:

  • an apple
  • a spoon of peanut butter
  • walnuts
  • some goji berries
  • a spoon of oats
  • some raisins
  • a spoon of shredded coconut

Yeah, it’s that simple! 🙂

Enjoy it for breakfast, pre workout or as a snack between meals!

Healthy pancake recipe. No sugar, no flour, no diary!

Today I have an awesome recipe for you. I eat this kind of breakfast 2-3 times a week, it is one of my all time favourite. I know everybody loves pancakes, but maybe some of you are not eating it, or feeling guilty when you eat it, because of the high calorie content.

Well, I have good news for you: this recipe has only natural ingredients, no sugar, no flour and no diary.

A traditional American pancake has about 700-750 calories, lots of fats and sugars. This one has less than half of those calories and more nutrients.

Here is what you will need:

  • 2 eggs
  • 1 banana
  • 1 ts of cinnamon
  • A little cooking spray/ olive oil

Peel and slice banana. Mash banana and add egg. Mix until fully combined. Heat a frying pan on medium. Spray with cooking spray.

Fill a 1/4 sized measuring cup with the pancake batter. Pour measuring cup onto heated pan.

Cook each side until lightly brown.

For the topping I used greek yogurt and I made a berry sauce from fresh strawberries, raspberries and a half tablespoon of honey.

So if we count the calories, one egg has 72 kcal, a medium banana has 100 kcal, a tablespoon (14 g) of oil has 100 kcal.

One cup of greek yogurt (227 g) is 130 kcal, but I did not used the whole cup, just half of it, so it’s 65 kcal. The strawberry topping is about 60 kcal.

So the whole pancake is a total of 469 kcal, which is not few, BUT the serving size for these pancakes is the half of what you see in my picture.

One portion is 234 kcal; it has good nutrients, proteins, healthy sugars, potassium. You can eat it as a breakfast or as a post workout meal.

Compared to the traditional pancake which has lots of sugar, milk, flour, baking powder,  butter and on top of it maybe some maple syrup or caramel syrup or some chocolate cream and the whole thing can easily reach 800 calories.

I think I made my point here, try it out, it is delicious and be aware: size does matters when it’s about portionsJ. Keep your portions small!!

Vegetable wok

wok (1)Hi girls and guys, the recipe I posted here is very tasty and easy to do. I will not write the ingredients amount because you can mix them adding or removing them as you prefer.

The basic ingredients are: mushrooms, asparagus, green peppers, sweet onions, pumpkin seeds, olive oil, balsamic vinegar, salt, garlic

Cook the onions with the olive oil, then take the peppers and cook them using a little water and vinegar. After a few minutes, put in the pan the mushrooms and the asparagus. Add salt and pumpkin seeds. Cook all the ingredients together for about 10-15 minutes and at the end… Eat it 🙂
